Our Cowboy Ribeye is a true steakhouse centerpiece. We hand-cut our Colorado Angus ribeye to a full 2 inches and french the bone for that classic short-bone tomahawk look. The thick cut keeps the steak juicy and cooks evenly, while the bone adds extra richness and flavor.
Raised on open-range pasture across eastern Colorado, these cattle develop deep marbling and bold, clean beef flavor from a natural diet of native grasses. Each steak is hand-cut in partnership with our local ranchers and built for the grill, smoker, or cast iron.
